Steamed Snapper with Ginger & Garlic

| Ingredients: |
- 2 tablespoons soy sauce
- 2 tablespoon rice wine
- Zest of 1 lemon
- 5 cloves garlic, finely sliced
- 1 inch piece of ginger, finely sliced
- 2 'heads' of bok choy
- 2 good-sized handfuls of green beans or asparagus
- 4 red snapper fillets

Method
Mix soy sauce, rice wine, lemon zest, garlic and ginger together. Put a pan on to boil with about 5cm of water in the bottom - your steamer must fit over this pan. Lightly oil a plate and place in steamer. Arrange leaves of bok choy and beans in an even layer on the plate. Place snapper fillets on top and drizzle with soy sauce mix. Place steamer basket over boiling water and steam fish for 5 minutes, or until flaky. Serve the fish & vegetables with boiled rice and drizzle any leftover dressing over the top.
